The Freshest Tasting Dinner
You will feel so healthy after eating this that you’ll feel very proud of how healthy you just ate. Hopefully you won’t spoil it by running out to Dairy Queen afterwards – heehee.

Taboule Salad Mix:
- 1 box Taboule Wheat Mix
Make Taboule as directed on the box. After you chill it in fridge for 30 minutes, then add the below ingredients. Stir it all up, let sit in fridge minimum 1 hour or overnight.
- 1 medium Tomato chopped
- 1 Tablespoon fresh Lemon Juice
- 1 Tablespoon Olive Oil
- 1/4 cup Fresh Basil chopped (or pulled to pieces by hand)
- 4 oz. Feta Cheese fat-free, crumbled ‘Herbed’ Tomato & Basil flavor. Comes in a 6 oz. plastic tub, purchased at Fry’s in the gourmet cheese section. I’m sure it would taste okay to use plain Feta Cheese.
- Optional: 2 Tablespoon chopped or slivered almonds
Cucumber Delight:
- 1 large Cucumber sliced or diced (set aside for now)
- 1/4 cup light Cream Cheese
- 1/4 cup nonfat Cottage Cheese
- 1/2 teaspoon of minced Garlic (I buy the kind in a jar, already minced)
- 1/4 cup Water
- 1 Tablespoon of Lemon Juice
Blend it all till pretty liquidized, I use the Magic Bullet. DO NOT put the cucumber in the blender. After blending it all up, pour mixture into a bowl, now add the diced cucumbers, stir it all up, add a pinch of salt & some fresh black pepper, & now ready to serve.
Here is how IÂ plate it up…
On the plate spread a bed of lettuce (I use Romaine), next add the Cucumber Delight, then add the Taboule Salad Mix on top. For protein, serve with rotisserie chicken or grilled chicken breast. For vegetarians, add Kidney Beans to the Taboule Salad Mix, maybe also some firm Tofu.
It’s very quick to make if you use prepared bagged coleslaw. I would recommend to serve it along side of enchiladas or tacos. It also tastes well as a garnish for turkey/hamburger patties.
Ingredients:
- One bag prepared coleslaw (found where the packaged lettuce/salad is located.
- 1 tablespoon lime juice.
- 1/2 teaspoon ground cumin.
- 2 tablespoons minced onion.
- One 15-ounce can beans, pinto or black.
- One diced tomato.
- One can diced mild green chilies.
- One avocado, pitted and sliced. Avocado is for topping.
- Optional for Topping: Sprinkle top with low calorie grated cheese.
The first thing you do is rinse the beans thoroughly. Canned whole beans can be very convenient to use, but also have unneeded sodium. A good rinse removes up to 35 percent of the sodium. Add all ingredients in a big bowl, stir thoroughly. Place bowl in refrigerator and allow mixture to chill for about an hour so the flavors blend together. Take out of refrigerator and top with avocado and cheese.

Whether you spell it Taboule, Tabbouleh, or Tabouli, this salad is very refreshing. What is great about this recipe is that it has 5 grams of fiber per serving.
NO COOKING NECESSARY!!! EASY & FAST TO MAKE!
First thing first… you have to purchase the correct box of Tabouli. Look for the brand ‘Near East’. On the box it reads ‘Taboule Mix Wheat Salad’. Make sure to buy the Wheat Salad, it is the one that has 5 grams of fiber.
Just follow the recipe on the box ‘Greek Taboule Salad’. When I made it, I didn’t have any fresh basil on hand or the feta cheese. You will not want to skip using lemon or olive oil.
Okay, here is how I make it:
1 package/box ‘Wheat Taboule’
1 tsp. olive oil (I use less than the box says)
2 Tbsp. lemon juice
1 tomato, chopped
1 cucumber diced (cucumber a must)
Optional: 2 Tbsp. fresh basil or dehydrated basil
Lettuce, whatever type you prefer. I use Iceberg, Spinach, & Romaine mixed together.
In a large bowl, combine wheat and contents of Spice Sack. Stir in 1 cup boiling water. I nuked the water in the micro for 2 minutes. Cover, let stand 30 minutes in refrigerator. Do not over mix the Tabouli, it will turn into mush.
In a bowl, mix together the olive oil, lemon juice, tomato, cucumber, & basil. Spread the cut up lettuce on a plate, add the Tabouli on top of lettuce, then add the the mixture ingredients on top of it all. I will even squirt extra lemon juice all over.
We have never been big fans of Tabouli or even of lemon juice on salads, I’m telling you, this recipe is quite tasty.
